Road legal race prep?

I have an S70 T5 i'm thinking about useing just for track days/hill climbs/1/4 mile etc but just wondering how far i can strip it for weight and keep it road legal? such as can i remove all but the drivers seat and seat belt, dashboard and so on

i have, obviously you've got keep the cluster for speed & warning lights etc. Only other thing to really watch for on the interior is theirs no sharp edges on any metal work Image
