Basically, someone has to pull the release handle and keep it out, whilst I release the bonnet. Presume the cables are stretched/jiggered as I can't see any adjustment? I've changed them on a p1 V70 before, so probably a repeat of that job?

That will more than likely cure the issue Mark, will have stretched by now for sure. Gul's bonnet link cable has stretched that much I have to lift the bonnet to slip my hand in on the drivers side and pull on the link cable to release the passenger side catch, to open the bonnet. I have got a good spare here to lube up and fit, when I get a moment.

Found this which I may order. I presume that it's just the cable from the cabin and not the one that goes from side to side, but that's probably the one that is dodgy anyway:-

When you pull the bonnet release the bonnet usually pops up enough to come out of the locks.
If it doesn't pop up I would be looking at that before changing the cables, especially if the locks open with someone holding the release.
I don't know how the bonnet springs up, maybe there is something inside the locks (or one of them) that has gone or needs lubrication.

I'm with Dave. Sounds to me like the spring release mechanism is seized or binding. I'd wirebrush, decontaminate and then grease up the spring release first before changing the cables. Bonnet cables don't really stretch, unlike handbrake cables, which are generally operated and pulled many times a day.

Another question is dose it not unlock at all or just not unlock on the passenger side, which is my problem, it isnt really really stretched cables (I have to agree with Lee here) , in my case what has really happened, is the cable outer sleeve corrodes and collapses, which then gives the impression that the cable has stretched, thus there isn't enough travel on the lever to remove the slack and open the bonnet. I just require changing the link cable and all will be good again.

I did order the cable on Saturday night, so will keep it to one side. I will try your suggestions thanks, and report back.
You can feel the bonnet release when you pull the lever, but as you release the lever, the bonnet re-catches at one or both sides.
The other weird thing that may not be related, is that my alarm dash top light stopped flashing for sometime(indicators only flashed when unlocking as well), but with the tinkering that I've already done, it seems to be suddenly working again....
Regarding my alarm issue, look what I've just found below. This is exactly my issue, so opening and closing the bonnet a few times temporarily cured the issue, but it's now stopped working again. I will try what the thread below suggests............

Pleased to say that after removing both bonnet catches and cleaning thoroughly, the bonnet now pops as it should and the alarm is also working a treat.

I should probably do the same with mine because I've only greased them up once many years ago so a service will keep them in check.
