So, there's usually much discussion about the V70/S70R, but I'[m asking specifically about the engine only, and only the 2319cc engines.
Aside from the turbos, are there any differences in the engines themselves?

The 2319cc engines in an R, be it 850, S70 or V70 are exactly the same as found in the T5 model of the same year. An 850 engine uses different pistons to an S/V70.
Excellent. Now I just need to find a nice manual V70R with a rattly engine, like the one I didn't bid on on eBay before I got this T5...

850r / V70r p1 is meant to have treated rods, I believe to make them slightly stronger but this makes no different afaik.

Did the later t5's (99' onwards) have VVT???
Just to help from my post years ago....lol
The early B234T4 850r had a spluttered coating upper connecting rod bearing halves for extra strength.
The B5234T3 which is in the `97 on p1 V70 T5 has the stronger rods which are exactly the same as the R ones and a lot stronger than the 850.
The first engine to have these rods was the 1996 B234T5 850r/T5r
This is why 850`s break rods easier than the V70...
