Perhaps your brake pads are worn, they must take a hammering going from 120 - 0 in 6.5 seconds. Ok, I'm teasing (just to avoid any confusion).

I have exactly the same problem mate, i took off worn volvo genuine discs and pads , and put on aftermarket discs/pads + mintex rubber anti rattle rubber stick on shims, and its still the same.
volvo genuine pads dont need the extra anti rattle pad, because its already there for free.
they were pretty worn and due for replacement, but its annoying.
i am wondering if it is resonance through the mounting bracket. because on a s60R, they made bolt on plates to support the bracket as a service fix to stop vibration and noise but there is no similar part available for the 850's.
