Can't really comment on the V70 but i had two in my 850 saloon and still room in the centre for a passenger. I must add though that it would depend on the child seats as some are wider than others.

The dipstick seal is a problem some have had, have you an oily patch on the bonnet soundproofing over the dipstick? If so just put a new seal on the stick and see how you go.
