no mate , its a weekends work with 2 of you, any 850 box will work yeah, best to buy an old manual for the conversion as neal did
Or just buy a manual car?

I guess there isn't a lot more to it than pedal box and gearbox itself? Or does removing the auto box make the ECU throw a wobbly?

A/T ECU is removed - Engine ECU cares not.
You ditch the auto ecu for the gearbox, and wire the starter inhibiter to fool it into thinking the car is in neutral. if you dont it wont start.
There is a thread on here somewhere of the conversion. It is a big job and i would certainly allow 3 days at least to do it.

id buy one thats manual or buy a motor that suits your needs. sounds like youve lost faith in the s60.shame realy never regreted a minute of owning mine

When i did my conversion (with help from some 'special' people) i brought a donor manual T5 which was not MOT'd taxed, £300, i was told to buy the donor as it has everything i needed including the wiring that runs from ECU across front of engine. Its a pretty simple job, all i did was make tea and fetch lunch.

Although I didn't do the conversion myself, it's an awesome mod. Tbh, when I rebuilt my engine and had the lot out, it's looks pretty straight forward, with the only constraints being facilities and time. Best of luck if you decide to jump in!
