STC makes no difference to the handling of the car. It only reduces the power going to the wheels when it detects slip.
If you're below 40km/h it uses the ABS pump to apply brake pressure to the spinning wheel - handy for snow or loose surfaces.

driving on the road, even fairly fast, there's no difference if you have it on or off.

The only time I've noticed it, is coming out of a sharp bend in a low gear (2nd or 3rd) and the inside wheel will spin up if it's turned off.

Personally I prefer leaving mine on. Less to think about, simply sink your foot and let it do the rest. Volvo also think you should leave it on, which is why on is the default every time you turn on the ignition :)

Depends if the car had STC or DSTC, DSTC has the ability to cut the throttle if it thinks you're being too silly. Hard cornering and fast changes in direction will trigger it.
